Chocolate Chip YumYums Cookie

Are you looking for a decadent yet guilt-free cookie? Look no further! This healthy sugar-free cookie recipe features our sugar-free chocolate chips and YumYums and is sweetened with Max Mallow marshmallows.

Ingredients

  • 8 regular sized Max Mallow Marshmallows (depending on how sweet you like your cookies)

  • ½ cup SunButter or nut butter of your choice

  • ¼ cup coconut oil

  • 1 large egg

  • 1 teaspoon vanilla

  • 1 cup tapioca flour (or flour of your choice)

  • 1 ¼ cups crushed nuts, we like pecans and walnuts

  • half teaspoon baking soda

  • quarter teaspoon salt

  • ¼ cup Max Sweets Mini Chocolate Chips

  • 4 oz Max Sweets YumYums sugar free candy coated chocolates (reserve some to decorate cookies)

Directions

  1. Preheat oven to 325°F line cookie sheet with silicone or parchment paper.

  2. Gently heat coconut oil and mix in mallows until fully melted.

  3. Mix in SunButter/Nut Butter and beat for 2 minutes. Pour into a mixing bowl.

  4. Beat in the egg and vanilla extract until well combined

  5. Add the flour, chopped nuts, baking soda, and salt. Beat until combined. 

  6. Mix in the chocolate chips and YumYums. Remember to save some YumYums for decoration!

  7. Roll the dough into balls and place several inches apart on the prepared baking sheets. Press each down to about ½ inch thick.

  8. Bake 12 to 15 minutes, until the edges are becoming golden brown. 

  9. Remove from oven and gently press the remaining YumYums into the tops of the cookies.

  10. Let cool on sheet and enjoy!
